OLINDA Brings Portuguese-Inspired Dining to Canton's Former BAM! Space

Business & Commerce — Canton

Gervasi Destinations has opened OLINDA — Modern Plates + Pours in Canton, a 7,500-square-foot Portuguese-inspired restaurant occupying the former BAM! and Royal Docks space.

Gervasi Destinations, the hospitality group behind the popular Gervasi Vineyard in Canton, has opened its newest concept: OLINDA — Modern Plates + Pours, a Portuguese-inspired restaurant occupying 7,500 square feet in the former BAM! Restaurant and Royal Docks Brewing space. The restaurant opened during the week of February 16 and features a menu built around Portuguese and Mediterranean flavors, including seafood-forward dishes, house-made pastas, and wood-fired preparations. The bar program emphasizes Portuguese wines, craft cocktails, and local brews. The 7,500-square-foot space underwent significant renovation to accommodate the new concept, including an updated kitchen, redesigned dining room, and refreshed bar area. The restaurant seats approximately 200 guests across indoor dining and a planned seasonal patio. OLINDA represents Gervasi Destinations' continued expansion beyond its flagship vineyard property. The group has built a reputation for immersive dining experiences that blend food, atmosphere, and hospitality in distinctive settings. The Canton location was selected in part because of its proximity to the Gervasi Vineyard campus and the growing dining scene along the city's commercial corridors. The former BAM! space had been vacant since late 2024. Industry observers see OLINDA's opening as a positive signal for Canton's restaurant market, which has seen several new concepts launch in the past year. The restaurant is open for dinner service Tuesday through Saturday, with plans to add weekend brunch in the spring.
